It all boils down to one file: minecraft.jar !!!
Here's what ya do BEFORE you update:
1. Locate minecraft.jar ... Go to your minecraft folder. Inside there will be another folder named "bin". Inside this folder you will find the aforementioned file. (If you can't find the folder and you're on Windows, go to Start > Run and type the folder address: %appdata%\.minecraft\bin
2. Create a backup folder ... This will be used to store the 1.7 jar file. Copy and paste the existing "minecraft.jar" into this folder. It might be a good idea to name the jar files in this folder as to not get confused which version it is. I would use minecraft_1.7.jar ...
3. Well, there really is no need for step 3. If you want to update to 1.8 now, go right ahead! If you want to go back to playing on KoolSource, just take the jar from the backup folder and overwrite the minecraft.jar. If you don't want to have to keep re-downloading the 1.8 jar, you can back that [ass] up in your backup folder as well.
Enjoy!

Jens Bergensten has today announced that the MineCraft Beta 1.8 update will be delayed, so will not be released on September the 8th as previously publicized.
Jens revealed the news alongside a new estimated release date on the social networking website Twitter. He commented that “The new good guess for a Beta 1.8 release date is 12th of September (this Monday) =( *takes cover*”
To try to calm fans Jens added “a delayed patch is eventually good, a bad patch is bad fore– until the next patch”. Will such a short delay really effect the update? Comment your opinions below.
